Meaty Creamy Risotto

I was inspired to make this dish while I was creating ‘The Beef Burger’ recipe in the kitchen and having left over mushroom meat from the ‘ burger, then, having ‘coconut cream’ and ‘chickpea rice’ sticking out noticeably every time I had walked passed them, the idea 💡 then came to me, “hmm, creamy, meaty risotto!, plus I was feeling a little peckish and needed something quick to eat while waiting for the beef burgers to cook and the Meaty Creamy Risotto dish was born…
