Homemade Pasta Stir Fry Bbq Sauce Mushroom Meat Burger

RECIPE >Bbq Mushroom Meat Burger Homemade Chickpea Pasta Stir Fry


~ Ingredients: ~ For The Pasta ~ -1 cup chickpea flour ( other flours can  work )

- 1/3 cup warm spring water

- 1/2 tsp sea salt


~ For The Burger ~

- 1 cup walnuts

- 1 cup mushrooms

- 1/4 red onion

- sea salt to taste

- 2 tbsp herb & spices mix( see herb & spices recipe below )    


~ For The Stir Fry ~

- 1/4 each of red/yellow & green pepper - 1 cup of cooked chickpea pasta

- A drizzle of grapeseed oil

- 2 tbsp herb & spices mix

- sea salt to taste

- 8 coriander seeds


~ For The Bbq Sauce

- 1/2 tube of tomato pureè

-  3 tbsp agave

-  1/2 tsp each of ground onion/clove/ginger/cayenne pepper/coriander/paprika

- 1 cup spring water

- 1 tbsp coconut aminos

  -1/2 tsp sea salt


LETS COOK! >

Step 1. firstly soak the walnuts in boiling water for 5-15 minutes, rinse, set aside.


Step 2. For the Pasta mix the ingredients together until a dough is formed, roll out the dough adding flour when nessesary, slice in to pasta slices & boil for 5-7 minutes on medium heat, sea salt to taste,drain, set aside.

Step 3. For The Burgers wash the mushrooms, then blend together with the walnuts, onion & herbs & spices until a rough consistency ( but not too smooth ), set the oven ( i use a grill air fryer ) to gas mark 7 ( 425 fahrenheit ) & line the baking dish with baking paper.  Make 4-6 burger shape patties & cook in the oven for 20-30 minutes until nice & brown ( or 20 minutes on each side if using an air fry ).


Step 4.  For The Stir Fry to a medium heated pan add red/yellow/green pepper, herb & spices mix, sea salt to taste & 8 coriander seeds & sauté for 2-3 minutes.


Step 5. For The Bbq Sauce to a separate pan of oil on medium heat, add, tomato pureè, agave, ground onion/clove/ginger/cayenne pepper/coriander/paprika, sea salt, stir, then add coconut aminos & spring water, stir & simmer on low to medium heat until desired consistency.


Step 6. Now add the plum tomatoes & pasta to the stir fry & stir fry for a further 2-4 minutes until the pasta is golden brown, plate up the stir fry with the burger & and drizzle or two of bbq sauce. Enjoy!
